Crispy Honey Chicken

Crispy honey chicken fried on the stove and then covered with sweet honey soy sauce. Serve with rice for dinner better than takeout!
Material
Honey sauce
- 1/2 cup Honey
- 2 tablespoons of low-sodium soy sauce
- 2 tablespoons of water
- 1/4 teaspoon sesame oil
- 1 tablespoon of apple cider vinegar or rice wine vinegar
- pinch of red chili flakes (optional)
- 1 tablespoon of corn flour
- 1 tablespoon of water
Chicken
- 3 large chicken breasts (about 1 1/2 lbs, small bite-sized pieces)
- 1 1/2 cup flour
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- 1/2 teaspoon coriander
- 1/2 teaspoon onion
- 1 1/2 cups buttermilk
- canola oil or vegetable oil (about 2 "-3" oil in the pan with sides)
Instructions
- Pour about 2 "-3" canola or vegetable oil into a large skillet with high sides. Turn the stove to medium-high heat and allow the oil to heat up as you prepare the sauce and other ingredients.
For Honey Sauce
- In a pan over medium heat, add honey, soy sauce, water, sesame oil, red pepper flakes (if using) and vinegar. Beat together and bring to a boil.
- In a separate bowl, stir in corn flour and water. Put aside. After the sauce boils, slowly add the corn flour mixture, while whisking. Bring to a boil and then reduce the heat to low and simmer for 10 minutes.
- ** If the sauce seems too thick (when you fry the chicken), add water, one tablespoon at a time, to thin it. You don't want the sauce to be too thin because it should be a thicker sauce.
- ** The sauce is quite boiling on the stove when you fry the chicken.
Crispy chicken
- Add fl0ur, chili p0wder, cumin, coriander and shallot powder to the bowl. Stir with a fork to combine. In a sperate bowl, add buttermilk.
- Two pieces of chicken at a time, once in each hand (finger), dip the chicken in flour, then into buttermilk and then back to flour. Place the coated chicken in hot oil and cook for about 5-7 minutes, turning the chicken as needed. Chicken needs to be cooked until and up to 165 degrees.
- Place cooked chicken on a paper-lined plate.
- Continue cooking the remaining chicken in the batch until it's finished.
- Mix all cooked chicken into a large bowl. Pour the hot honey sauce and stir gently until all the chicken pieces are coated.
- Serve with cooked rice and sliced green onions.
