Material
- 4 slices of thick meat, diced
FOR CHICKEN
- 1 tablespoon of vegetable oil
- 1 tablespoon of butter
- 4 (1 pound, total) boneless, skinless chicken breast, pounded to 1/4-inch thickness
- salt and fresh pepper, to taste
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon smoked or sweet paprika
FOR CREAM CHEESE CREAM
- 4 ounces of cream cheese, mashed
- 1/4 teaspoon of garlic powder
- 1/4 teaspoon onion
- 1/4 teaspoon of dried weed dough
- 1/2 teaspoon dried chives
- 4 ounces grated cheddar cheese, white or yellow - I use both
FOR GARNISH
- fresh chopped parsley
- green onion slices
Instructions
- Preheat the oven to 400F.
- Brush a 9x13 pan with a cooking spray and set it aside.
- Set a large skillet over medium-high heat and add diced bacon; Cook until crispy.
- Remove the bac0n from the pan and set it aside. DO NOT throw away the bacon fat.
- Return the pan to heat it and add vegetable oil to the remaining bacon.
- Pound chicken breast with a thickness of 1/4 inch and season with salt, pepper, garlic powder, and paprika.
- Add chicken breast to hot oil - you might have to do this in batches if the pan isn't large enough - and cook chicken breast for 2 to 3 minutes, or until golden brown.
- Turn the chicken breast, add butter, and continue cooking for 3 more minutes.
- Remove the chicken breast from the pan and set it on a baking sheet that has been prepared previously. Put aside.
- In a small bowl, combine the cream cheese, garlic powder, onion powder, dill weed, and scallions; stir until evenly mixed. Taste the seasonings and adjust. * You can als0 stir 1 tablespoon of store-bought seasoning.
- Cover each chicken breast with 2 tablespoons of cream cheese mixture. Spread to the surface of each chicken breast.
- Take half of the bacon and add it on top of the cream cheese.
- Sprinkle grated cheese over chicken breast.
- Bake, open, for 15 minutes, or until the chicken is cooked and the cheese is melted and slightly browned.
- Remove from the 0ven.
- Garnish with the remaining meat, fresh parsley, and scallions.
